The Nanaimo Bar:

The Nanaimo Bar recipe dates back to the early 1930s, possibly from a recipe called the Chocolate Fridge Cake. There have been many searches and no evidence supports the connection, or has not ever been named "Nanaimo Bar(s)." Others claim that it was created in New York during the same time period however locals from Nanaimo, BC say it goes back to the coal-mining days of early Nanaimo, when it was sent to the miners from their friends and relatives in the United Kingdom as a gift. In short, this coal-mining connection could be legend rather than fact, and suited to promote Nanaimo's heritage. Regardless of where this recipe came from, the Nanaimo Bar is still a great and delicious treat and is loved by all. Please see the Nanaimo Bar recipe shown below.

Nanaimo Bar - Ingredients:

Nanaimo Bar - Base

2 squares (oz.) semi-sweet chocolate
2 cups graham cracker crumbs
1 cup coconut
1/2 cup softened butter
1/2 cup chopped walnuts
2 tablespoons sugar
1 teaspoon vanilla
1 egg

Nanaimo Bar - Filling

1/4 cup butter, softened
3 tablespoons milk
2 tablespoons instant vanilla pudding
2 cups confectioners (powdered) sugar

Nanaimo Bar - Glaze

4 squares (oz.) semi-sweet chocolate
1 tablespoon butter

Nanaimo Bar - Procedure:

Nanaimo Bar - Base

Combine ingredients. Press into 9 inch square cake pan. Chill.

Nanaimo Bar - Filling

Combine butter, milk, and custard powder. Blend in confectioner's sugar. Spread over base. Chill at least 15 minutes.

Nanaimo Bar - Glaze

Partially melt chocolate and butter. Remove from heat and stir until melted. Spread over custard layer. Chill.
Store in refrigerator, covered, up to 1 month. Makes 24 bars.

Serve chilled. They're rich, so small portions may be appropriate.
